5-Minute Breakfast (overnight) Baguette

5-Minute Bread

Ingredients

  • 235g flour
  • 1/4 heaping tsp salt
  • 1/4 tsp yeast (a little less)
  • 180ml water, filtered, room temp

Before going to bed

  1. mix dry ingredients in bowl
  2. add water, mix with spatula until all flour is mixed in (do not knead)
  3. cover, leave in bowl 8-10 hours/overnight

Directions for morning

  1. remove rack from oven, put some parchment paper on it
  2. Oven to 225c
  3. DO NOT punch down or otherwise puncture the nice fluffy dough
  4. put lots of flour on working surface (i used metal tray with lip for easy cleanup)
  5. sprinkle with plenty of flour in bowl
  6. use spatula or bread scraper to take bread out carefully onto surface
  7. lift, stretch, and flip over to make long bread shape on rack. diagonal if necessary
  8. bake for 25 minutes (rotate aftr 15-ish minutes because oven is lame and un even)

  • Salt 2x good tsp
  • Yeast 3/4 tsp
  • Water 730ml
