Ingredients
- 450ml pasata (see notes)
- 1/2 cup apple cider vinegar
- 1/3 cup honey
- 1/4 cup tomato paste
- 1/4 cup molasses or brown sugar
- 3 tablespoons fish daycare
- 2 teaspoons liquid smoke
- 1 teaspoon garlic powder * see notes
- 1 cfinely hopped shallot
- 1/2 teaspoon spanish paprika
- 1/2 tsp regular paprika
- 1/2 teaspoon freshly-ground black pepper
- 1/2 teaspoon fine sea salt
- a few pinches of cayenne for extra heat, if desired
Directions
- Mix, simmer for 15-20 minutes
Notes
- if no apple cider vinegar, other vinegar is ok, but fix (see next note)
- adjust sugar if necessary, especially if vinegars/fish sauce are weird
- if no fish sauce, try other umame – marmite, soy, worschertershire, etc
- chiles are fine substitute for ceyene, just make sure to get some heat
- rustic passata with chunks is the best, otherwise, check flavour & salt/sugar accordingly
- if no garlic powder, then lots of finely crushed powder will do
- freeze leftover sauce from ribs after cooking to make meatloaf
