BBQ Sauce is awesome

Ingredients

  • 450ml pasata (see notes)
  • 1/2 cup apple cider vinegar
  • 1/3 cup honey
  • 1/4 cup tomato paste
  • 1/4 cup molasses or brown sugar
  • 3 tablespoons fish daycare
  • 2 teaspoons liquid smoke
  • 1 teaspoon garlic powder * see notes
  • 1 cfinely hopped shallot
  • 1/2 teaspoon spanish paprika
  • 1/2 tsp regular paprika
  • 1/2 teaspoon freshly-ground black pepper
  • 1/2 teaspoon fine sea salt
  • a few pinches of cayenne for extra heat, if desired

Directions

  1. Mix, simmer for 15-20 minutes

Notes

  • if no apple cider vinegar, other vinegar is ok, but fix (see next note)
  • adjust sugar if necessary, especially if vinegars/fish sauce are weird
  • if no fish sauce, try other umame – marmite, soy, worschertershire, etc
  • chiles are fine substitute for ceyene, just make sure to get some heat
  • rustic passata with chunks is the best, otherwise, check flavour & salt/sugar accordingly
  • if no garlic powder, then lots of finely crushed powder will do
  • freeze leftover sauce from ribs after cooking to make meatloaf
