Birria Tacos

Ingredients
- 4 Spare Ribs
- 1 Beef cheek
- 4 tomatoes
- 4 pasilla chiles
- 2 small pink onions (preferable 1 white)
- 2 jalapenos
- 4 cloves of garlic
- 250ml chicken broth
- 500ml beef broth
- 1 tsp cumin
- 1 tbsp cashmiri chili powder*
- 1 tsp chili powder
- 4 bay leaves
Set oven to 140C
Directions
- Remove stem, seeds, placenta from dry chiles & rinse lightly
- toast chiles just, set aside
- Toast tomatoes, onions, jalapenos, and garlic
- Put in blender, blend,
- add cumin, powders, and chicken broth, blend some more
- in cast irron pot/dutch overn: salt, pepper, brown meat, set aside
- pour sauce into pan, deglacze, put meat back in
- add bay leaves
- put in oven for 3 hours
