Ingredients

  • 4 Spare Ribs
  • 1 Beef cheek
  • 4 tomatoes
  • 4 pasilla chiles
  • 2 small pink onions (preferable 1 white)
  • 2 jalapenos
  • 4 cloves of garlic
  • 250ml chicken broth
  • 500ml beef broth
  • 1 tsp cumin
  • 1 tbsp cashmiri chili powder*
  • 1 tsp chili powder
  • 4 bay leaves

Set oven to 140C

Directions

  1. Remove stem, seeds, placenta from dry chiles & rinse lightly
  2. toast chiles just, set aside
  3. Toast tomatoes, onions, jalapenos, and garlic
  4. Put in blender, blend,
  5. add cumin, powders, and chicken broth, blend some more
  6. in cast irron pot/dutch overn: salt, pepper, brown meat, set aside
  7. pour sauce into pan, deglacze, put meat back in
  8. add bay leaves
  9. put in oven for 3 hours
