Ingredients

  • 1 medium butternut squash
  • 1/2 fennel
  • 1/2 package of spinach
  • 1/2 dl uncooked quinoa
  • feta

Directions

  1. Preheat the oven to 200 C. Line a baking sheet with parchment paper.

  2. Peel the butternut squash and cut it into cubes.

  3. Place the butternut squash cubes into a bowl and toss well with the oil, salt, and black pepper.

  4. Pour the butternut squash cubes onto the parchment lined baking sheet in an even layer, then roast for 35-40 minutes, until the squash is soft and thoroughly caramelized on the outer surfaces, but not burned.

  5. Cook the quinoa.

  6. Cut the fennel into thin slices.

  7. When the butternut squash and quinoa is ready cooked toss them together with all other ingredients, topp with feta cheese.

  8. Serve & Enjoy!
