Cabbage and Cucumber Slaw

Fresh, high-volume slaw that works well with grilled or roasted chicken

Ingredients

  • 1/2 small white cabbage, finely shredded
  • 1/2 cucumber, thinly sliced or chopped small
  • 2 spring onions, finely sliced
  • big handful parsley, chopped
  • small handful mint or dill, chopped
  • juice of 1/2 lemon
  • 1 tsp olive oil
  • salt
  • pepper

Directions

  1. Add the cabbage, cucumber, spring onion and herbs to a large bowl.
  2. Add the lemon juice, olive oil, salt and pepper.
  3. Toss well until everything is evenly coated.
  4. Leave for 10-15 minutes if you have time so the cabbage softens slightly.
  5. Taste and adjust with more lemon, salt or pepper if needed before serving.

Notes

  • if the cucumber seems watery, lightly salt it first and let it sit for a few minutes before adding
  • dill gives it a slightly cooler flavour, while mint keeps it brighter
  • very good with sumac chicken or other simple roasted meats
