Cabbage and Cucumber Slaw
Fresh, high-volume slaw that works well with grilled or roasted chicken

Ingredients
- 1/2 small white cabbage, finely shredded
- 1/2 cucumber, thinly sliced or chopped small
- 2 spring onions, finely sliced
- big handful parsley, chopped
- small handful mint or dill, chopped
- juice of 1/2 lemon
- 1 tsp olive oil
- salt
- pepper
Directions
- Add the cabbage, cucumber, spring onion and herbs to a large bowl.
- Add the lemon juice, olive oil, salt and pepper.
- Toss well until everything is evenly coated.
- Leave for 10-15 minutes if you have time so the cabbage softens slightly.
- Taste and adjust with more lemon, salt or pepper if needed before serving.
Notes
- if the cucumber seems watery, lightly salt it first and let it sit for a few minutes before adding
- dill gives it a slightly cooler flavour, while mint keeps it brighter
- very good with sumac chicken or other simple roasted meats
