Caprese Salad
Caprese Salad is awesome
Ingredients
- 2 large courgettes (zucchini)
- 2 tbsp. extra-virgin olive oil
- kosher salt
- Freshly ground black pepper
- 2 c. cherry tomatoes, halved (400g)
- 1 c. mozzarella balls, quartered if large
- 1/4 c. fresh basil leaves
- 2 tbsp. balsamic vinegar
Directions
- make zoodles by putting through [ grater thing ]
- toss with tomatoes & mozerella and 1tbsp oil
- olive oil, salt & pepper to taste
- garnish with basil, olive oil and balsamic
Notes
- Makes 2 dinner-sized servings with some leftovers for lunch next day.
