Caprese Salad

Caprese Salad is awesome

Ingredients

  • 2 large courgettes (zucchini)
  • 2 tbsp. extra-virgin olive oil
  • kosher salt
  • Freshly ground black pepper
  • 2 c. cherry tomatoes, halved (400g)
  • 1 c. mozzarella balls, quartered if large
  • 1/4 c. fresh basil leaves
  • 2 tbsp. balsamic vinegar

Directions

  1. make zoodles by putting through [ grater thing ]
  2. toss with tomatoes & mozerella and 1tbsp oil
  3. olive oil, salt & pepper to taste
  4. garnish with basil, olive oil and balsamic

Notes

  • Makes 2 dinner-sized servings with some leftovers for lunch next day.
