For tacos
Ingredients
- roasted chicken, 600g yield (used 3/4 last time)
- salt, garlic, pepper, cumin, oregano
- 1 medium onion, thickly sliced
- 1 large garlic clove
- 1/3 cup pumpking seeds (or mix sunflower/pumpkin)
- 1/3 cup mixed raisins/cranberry
- 2 cups chicken broth
- 1 cups veggie broth
- 1 can chopped tomatoes (400g)
- 1 can chipotle chiles in adobo (100g)
- salt,pepper,cumin, paprika.
Directions
- season chicken with salt, pepper, cumin, paprika
- Add oil to pan
- cook onions on heat for a couple of minutes
- add garlic to onions, and chicken, cook a bit more
- Remove chicken from pan ONLY (leave onions)
- add berries and seeds
- Add 1 cup broth and deglaze
- remove all
- add onions, seeds and berries to processor with 1 cup broth and blend well
- Add tomatoes & chipotle to pan with remaining broth
- strain processed onions, seeds, berries into pot
- add chicken - (season wiht more garlic, oregano, cumin? salt to taste?)
- Bring to a boil
- Stew on med/low heat for 1 hour.
