Ingredients
Chicken
- small chicken
- 1/2 onion
- Garlic Clove
- Sprig of Thyme
- Sprig of rosemary
- Salt & Pepper
Dumplings
- 1 cup flour
- 1/4 cup cornmeal
- 1/2 tsp salt
- 1+ cup warm water
Soup
- 1 large carrot
- 1/2 onion
- 1 large celery
- 4 cups chicken broth
- 1/4 tsp ceyenne
- 1/2 tsp nutmeg
- sprig of thyme
- handf-full of greens,kale, or chickory
Directions
Chicken
- roast (or buy) chicken ahead of time and let cool a little
- save drippings and debone
- break meat apart with forks, you want more stringy “pulled” meat than chunks.
- set aside
Dumplings
- mix dry ingredients
- add a little hot water at a time, and roll into ball
- when it gets a nice consitency, roll into 1cmx3or4cm dumplings
- put aside onto a plate dusted well with flour
Soup
- Into your stock pot your carrot, celery, onion
- cook in chicken fat or olive oil if it’s not enough until softened
- add chicken broth, thyme, nutmeg, ceyenne
- add chicken
- bring to boil
- salt/pepper to taste
- Cook for 15 minutes
Chicken & Dumplings ( putting it all together )
- Add greens
- Add the dumplings to the soup, and boil for 15 minutes (up to 30).
- check by taking out some yummy dumplings and sampling
- the water should boil down, and stew should be come thick from flour
- if it’s not thick enough, you can add some flour/cornstarch into cold water, and then add it to the stew
