Ingredients
- 2 Tesco hamburgers (?g)
- 1 Calabrese sausage (casing removed)
- 1 small red onion, diced (80g yield)
- 1 bell pepper, diced
- 2 med/lg garlic cloves, chopped
- 1 small tin whle tomatoes (225g)
- 1 tbsp tomato paste
- 1/4 heaping tsp smokey paprika
- 1/8 tsp cumin
- 1/8+ tsp chili powder
- 1/8+ tsp ceyenne pepper
- 1 thai chilli
- salt, pepper
- fries (large white ceramic pan)
- 100g medium cheddar block, grated
- 3 slices american cheese slices
- creme fraiche/sour cream
- 2 spring onions ( garnish)
- cilantro (garnish)
Directions - chilli
- put fries in oven (will take about 30 minutes – length of time for next bit)
- heat cast iron skillet with plenty of oil
- add meat, sausage and mash so you have small bits that wil brown nicely
- add onion as soon as meat is in small chunks
- add salt & pepper, thai chilin & brown for a bit
- add bell pepper & garlic, soften for 1/2 minutes
- add spices (whenever, can do before, but this is a good time)
- add tin of tomatoes & tomato paste (add water to tin to get all the bits out and make more wet
- mix, taste, add salt/heat as desired.
- water will likely vaporate, add a bit more, cover and let stew while fries finish, should be about 15 minutes
Directions - putting it togeher
- while chilli is stewing, grate cheddar, chop american cheese, set aside
- when fries are done, remove from oven, set oven to broil
- put fries in metal pan, and add chilli, cover with cheese
- put in oven for 3 minutes so cheese melts
- remove from oven, and garnish with chopped spring onion & cilantro
