Chorizo in red wine is awesome

Ingredients

  • 1.5 banana shallot, sliced into rings
  • 2 small-med garlic clove, coarsely chopped
  • 300g/1oz soft chorizo, cut into 2.5cm long pieces
  • 2 fresh bay leaves
  • 1 cup red wine
  • 1 tbsp chopped fresh flat leaf parsley
  • sherry?

Directions

  1. Heat a frying pan on medium/low heat
  2. Add the chorizo to the pan and fry until crisp the oil is released (5-7 minutes)
  3. Add the shallots and bay leaves, continue to cook on medium until shallots are clear (5-7 min)
  4. Add the garlic and cook for 1 minute
  5. Add the red wine, and cook until the volume of wine has reduced to just a thick sauce
  6. Add the dry sherry and deglaze the pan. ?
  7. garnish with choped parsley
