Chorizo in red wine
Chorizo in red wine is awesome
Ingredients
- 1.5 banana shallot, sliced into rings
- 2 small-med garlic clove, coarsely chopped
- 300g/1oz soft chorizo, cut into 2.5cm long pieces
- 2 fresh bay leaves
- 1 cup red wine
- 1 tbsp chopped fresh flat leaf parsley
- sherry?
Directions
- Heat a frying pan on medium/low heat
- Add the chorizo to the pan and fry until crisp the oil is released (5-7 minutes)
- Add the shallots and bay leaves, continue to cook on medium until shallots are clear (5-7 min)
- Add the garlic and cook for 1 minute
- Add the red wine, and cook until the volume of wine has reduced to just a thick sauce
- Add the dry sherry and deglaze the pan. ?
- garnish with choped parsley
