Couscous with bell peppers

Couscous with bell peppers are awesome

Serves 2

Ingredients

  • chicken broth (1/3 cube+ 1.25 dl)
  • 1dl Couscous*
  • 3 whole Red & yellow bell peppers*
  • small banana shallot or half a big one
  • Handful Dried berries (sultans, cranberries etc)
  • 170 g Greek yoghurt (a little less than a cup)
  • 1/2 Cucumber
  • lemon juice
  • SPINACH (we always forget the spinach)
  • Garlic (1 clove raw OR 1/4 garlic pwder)
  • Salt & pepper
  • optional: some spicy pepper*

Directions

  1. Cut the cucumber in 4 pieces and with yoghurt & garlic food processor. salt & lemon to taste
  2. set aside
  3. Cook the couscous
  4. Cut up the bell peppers and fry them up with shallot
  5. Mix bell peppers with spinach and couscous mix.
  6. Serve topped with the yoghurt sauce.

Notes

  • can re-do balance of peppers & couscous, but this was nice and light.
  • works really well with fine couscous
