Creamy Polenta

Ingredients

  • 1 cup polenta
  • 2 cups milk
  • 1 cup whipping cream
  • 1 cup chicken stock
  • 1 tsp rock salt
  • 1 tbsp unsalted butter
  • 1/3 cup fresh grated parmesan

Directions

  1. bring all the liquids to just starting to boil (85-90c)
  2. add Polenta and salt
  3. cover and leave cooking on low 25 min, stir occasionally with whisk/fork to keep separated and prevent from sticking to bottom( every 3/5 min)
  4. uncover, add butter, parmesan, mix, and cook for another 10 min, stirring every 2 min.
  5. set aside covered if done early, or uncovered if food is ready
