Creamy Polenta
Polenta is awesome
(serves 4)
Ingredients
- 1 cup polenta
- 2 cups milk
- 1 cup whipping cream
- 1 cup chicken stock
- 1 tsp rock salt
- 1 tbsp unsalted butter
- 1/3 cup fresh grated parmesan
Directions
- bring all the liquids to just starting to boil (85-90c)
- add Polenta and salt
- cover and leave cooking on low 25 min, stir occasionally with whisk/fork to keep separated and prevent from sticking to bottom( every 3/5 min)
- uncover, add butter, parmesan, mix, and cook for another 10 min, stirring every 2 min.
- set aside covered if done early, or uncovered if food is ready
