Fondant Potatoes is awesome

Ingredients

  • Maris Pipers Potatoes (or Russet)
  • vegetable oil
  • 4tbsp unsalted butter
  • 2-3 garlic cloves
  • 2-3 thyme sprigs
  • 3/4 cup chicken stock

Directions

  1. Cut the top and bottom off the potatoes and then shape them to same size cylinders about 100 grams each so they cook evenly.
  2. Soak in water while doing the rest, for at least 5 min to remove some starch.
  3. First side: Pat them dry before frying them on medium heat on 1 side. Salt and pepper. Fry for around 6-7min or until they have a golden brown color.
  4. Second side: Remove excess oil from the pan, flip the potatoes and fry the other side until brown.
  5. Add some butter with thyme and garlic. Fry for 5 min, checking temperature so butter doesn’t brown/burn.
  6. Add the chicken stock and place in oven 200F for 30-40min.
