Fondant Potatoes
Fondant Potatoes is awesome
Ingredients
- Maris Pipers Potatoes (or Russet)
- vegetable oil
- 4tbsp unsalted butter
- 2-3 garlic cloves
- 2-3 thyme sprigs
- 3/4 cup chicken stock
Directions
- Cut the top and bottom off the potatoes and then shape them to same size cylinders about 100 grams each so they cook evenly.
- Soak in water while doing the rest, for at least 5 min to remove some starch.
- First side: Pat them dry before frying them on medium heat on 1 side. Salt and pepper. Fry for around 6-7min or until they have a golden brown color.
- Second side: Remove excess oil from the pan, flip the potatoes and fry the other side until brown.
- Add some butter with thyme and garlic. Fry for 5 min, checking temperature so butter doesn’t brown/burn.
- Add the chicken stock and place in oven 200F for 30-40min.
