Ingredients
- 1 pounds thinly sliced yellow & red onions
- 2 tablespoons (42 grams or 1 1/2 ounces) unsalted butter
- 1 tablespoon (15 ml) olive oil
- 1 garlic clove
- 1/2 teaspoon (5 grams) table salt, plus additional to taste
- 1/4 teaspoon (1 gram) granulated sugar (helps the onions to brown)
- 2 tablespoons (24 grams or 7/8 ounce) all-purpose flour
- 5 cups or 1.5? liters) beef and chicken or just beef stock. broth if nothinge lse
- 1/2 cup (118 ml) dry white wine or dry white vermouth
- Freshly ground black pepper
- 2 tablespoons (45 ml) cognac or brandy (optional)
- 3/4 cups gruyere with parmesan
- 1 bay leaf
- 1/4 tespon thyme
- (both in bouquet)
Directions
- Melt butter and olive oil.
- Sautee onions for 25 minutes.
- Add flour, sautee for 3 minutes
- Add all the wine then stock. a little at a time. stirring between additions
- Add bouquet & cook for 30 minutes
- Salt & pepper to taste (easy on salt,the cheese is salty)
- Add 2 baguette slices tops, and some cheese. easy not to over-cheese it broil on 375 for 10 minutes.
