Sushi Ginger (Gari)

Gari is awesome with sushi

Ingredients

  • Gari (sushi ginger)
  • 100g of fresh ginger, preferably young ginger
  • 1 tsp salt (two 1/2 tsp portions)
  • 500ml of water
  • 100ml of (sweet) rice vinegar (amazu/sushi vinegar)
  • 4tbsp of sugar

Directions

  1. wash and peel the ginger before slicing finely on a mandolin
  2. Place the ginger in a pan with the water and salt, bring to the boil and cook for 3 minutes. Drain the ginger and transfer to a clean jar or container
  3. Place the vinegar, salt, and sugar in a small saucepan, bring to the boil then allow to cool. Pour the liquid over the ginger and marinate overnight before using
