Ingredients
- rice
- broccoli florets
- carrots, julienned
- purple cabbage, sliced
- mushrooms, halved
- olive oil
- cilantro
- lime
Green Curry Sauce
- 1/2 cup raw cashews
- 1 tbsp green curry
- 160 ml coconut cream
- 1/2 tbsp lime juice
- 1 tsp fish sauce
- 1 tsp brown sugar
- 1/4 tsp salt
Directions
- Make the curry sauce by adding all ingredients in a blender and mix for 2 min until smooth.
- Cook the rice.
- Steam the broccoli and carrots and stir fry the mushrooms and cabbage in olive oil.
- Add rice in bowls top with veggies and drizzle over the curry sauce. Garnish with cilantro and lime.
