Kimchee fried rice
Kimchee fried rice is awesome

Ingredients
- 1/2 tbsp rapeseed oil
- 1 garlic clove sliced
- 200g tenderstem broccoli, chopped
- 4 spring onions, thinly sliced
- 50g kimchi
- 2 carrots, cut into ribbons using a peeler
- 2 eggs
- 1 lime, 1/2 juiced, 1/2 as a wedge to serve
- handful coriander
- hot sauce to serve
- 200g rice

Cook the rice.

Fry garlic, ginger, broccoli and half the spring onions in 1 tbsp oil. Fry for 5-7 min until softened, then add the kimchi and fry for a couple of min more.

Tip in the rice, breaking it up with the back of a spoon, then add the carrot. Cook for a min until all is heated through and serve on a plate.

Fry the eggs in the remaining oil and season.

Tope the rice with the eggs, coriander, spring onion and squeeze the lime juice over it. Serve with hot sauce.
