Kimchee fried rice

Kimchee fried rice is awesome

Ingredients

  • 1/2 tbsp rapeseed oil
  • 1 garlic clove sliced
  • 200g tenderstem broccoli, chopped
  • 4 spring onions, thinly sliced
  • 50g kimchi
  • 2 carrots, cut into ribbons using a peeler
  • 2 eggs
  • 1 lime, 1/2 juiced, 1/2 as a wedge to serve
  • handful coriander
  • hot sauce to serve
  • 200g rice

Directions

  1. Cook the rice.

  2. Fry garlic, ginger, broccoli and half the spring onions in 1 tbsp oil. Fry for 5-7 min until softened, then add the kimchi and fry for a couple of min more.

  3. Tip in the rice, breaking it up with the back of a spoon, then add the carrot. Cook for a min until all is heated through and serve on a plate.

  4. Fry the eggs in the remaining oil and season.

  5. Tope the rice with the eggs, coriander, spring onion and squeeze the lime juice over it. Serve with hot sauce.
