Meatloaf
Meatloaf is awesome
Ingredients - meat
- 1/2 pound (250g) ground beef
- 1/2 pound (250g) ground pork
- 1 cup fresh bread
- 1/2 cup tomato sauce* (take from 500ml for sauce)
- 1 medium/small onion diced finely (3/4 cup yield)*
- 1 egg, lightly beaten
- 1/2 teaspoon salt*
- 1/4 teaspoon pepper*
Ingredients - sauce
(can substitute the bbq sauce*)
- 500ml tomato sauce (-1/2 cup used for meat)
- 2 tablespoons white wine vinegar
- 1 tablestpoon balsamic vinegar
- 3 tablespoons brown sugar
- 2 tablespoons Dijon mustard
- 2 tablespoons Fish sauce*
- 1 teaspoons salt
- 1/4 teaspoon pepper
Directions
- Preheat oven to 180c/350f
- Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce.
- Form this mixture into a loaf and place it in a shallow pan.
- Stir together the remaining tomato sauce, vinegar, sugar, mustard, fish sauce.
- Cover meatloaf with sauce, add water to remaining sauce and put rest in pan.
- cover with foil Bake for 50minutes
- remove from oven, uncover, and baste well with sauce
- return to oven for 10 more minutes so sauce on top glaze*
Notes
- didn’t have tomato sauce, used ketchup fore meat and leftover bbq sauce from ribs, turned out ok
- didn’t put salt & pepper if used ketchup
- when using the leftover bbq sauce, it needed about 1/4 cup brown sugar
- it seems like too much onion, but it’s just right.
- Serve with mashed potatoes & greens or mac & cheese.
- Fish sauce is substitute for Worcestershire (allergies)
