One Pot Mac & Cheese

Mac & Cheese balls is awesome

1hr small dishes/sides pasta

Ingredients

  • 1.5 Cups water
  • 1 cup milk
  • 225g Macaroni*
  • œ teaspoon Dijon mustard
  • Small pinch cayenne pepper?
  • 1 cup processed cheese slice (see combos)
  • 1 cup shredded cheese (see combos)

Directions

  1. Bring to milk & water boil
  2. Add pasta (it seems like too much liquid, but it’s not)
  3. simmer for(8 minutes or time)
  4. in same pot, add sliced cheese
  5. stir constantly, until cheese is completely melted, about 1 minute.
  6. remove from heat, stir in cheddar/combo and mustard until evenly distributed but not melted.
  7. cover saucepan and let stand for 5 minutes
  8. add ceyenne, give a final stir. ready to eat, or leave covered until ready to eat.

Notes

  • smaller ones are better
  • process cheesed slices are for the emulsifier (and colour)

combo 1 - the local

  • 75g asda/wykefarms extra mature cheddar
  • 75g sainsburys emmental
  • 7 slices(120g) asda/yellow for processed slices
