Pickled Daikon
Pickled Daikon is awesome
Ingredients
- 1/3 cup sugar
- 1 med/large (?g) daikon
- 1 tsp salt
- 1 tsp tumeric
- 1 cup rice vinegar
- 1 cup water ( see instructions below)
Directions
- slice daikon with mandolin
- put in sugar, mix, let sit for 2 hours,
- water will come out.
- remove radishes, put in towel, and strain
- put into sterile jar
- DO NOT THROW OUT WATER, this is the water for the pickling juice. top up to 1 cup if not enough
- mix vinegar and 1 cup water
- add salt, vinegar, tumeric, boil
- pour over radishes, shake out air, cover
- let cool
- put in fridge at least overnight, a week if possible
