Pickled Daikon

Pickled Daikon is awesome

Ingredients

  • 1/3 cup sugar
  • 1 med/large (?g) daikon
  • 1 tsp salt
  • 1 tsp tumeric
  • 1 cup rice vinegar
  • 1 cup water ( see instructions below)

Directions

  1. slice daikon with mandolin
  2. put in sugar, mix, let sit for 2 hours,
  3. water will come out.
  4. remove radishes, put in towel, and strain
  5. put into sterile jar
  6. DO NOT THROW OUT WATER, this is the water for the pickling juice. top up to 1 cup if not enough
  7. mix vinegar and 1 cup water
  8. add salt, vinegar, tumeric, boil
  9. pour over radishes, shake out air, cover
  10. let cool
  11. put in fridge at least overnight, a week if possible
