Roasted plums, marscapone, and pistachio canapes

Ingredients

  • 1 package Rahms 24 mini croustades (with the Swedish flag on them, from Waitrose)
  • 3 plums (pitted and halved)
  • 1/2 cup honey
  • 1 Tbsp Butter
  • 1.5 tsp lemon
  • 1/2 tsp orange flower water
  • marscapne
  • mint, sliced into 1-2m slivers
  • pistachios
  • maldon salt
  • (posh) olive oil

Directions

Plums

  1. melt butter, add butter, lemon in pot, just until runny
  2. remove from heat, add flower water
  3. put plums, face-side down into small (blue) oven container
  4. add half liquid to plum halves
  5. Roast 400c for 10 min
  6. (Do pistachios while roasting)
  7. turn over, add more liquid, roast for another 10 min (depending on how big they are, might need a bit more)
  8. remove from oven, let cool, but just for a minute

Pistachios

  1. Preheat pan high/med
  2. toss nuts, let smoke/blaken a bit
  3. remove, let cool a bit, and chop into big chunks (don’t discard powdery bits)
  4. toss in olive oil and sea salt

Put it all together

  1. pour about 1 tbsp plum into cup
  2. top witb a dollop (1/2 tsp) marscapone
  3. sprinkle with nuts
  4. sprinkle with mint

Notes

  1. Serve with champagne
  2. The plums/sauce makes enough for 12 croustades, or half the package.
  3. You’ll have some syrup leftover for yummy pancakes!
