Romesco Sauce (for Patatas Bravas)

Ingredients
- 1 jar SMOKED/FIRE roasted red bell peppers (175g yield)
- 1 garlic clove, smashed
- 1/2 cup cashews, toasted (or not)
- 1/4 cup tomato paste ( purée )
- 2 tablespoons chopped flat-leaf parsley
- 1 tbsp dark balsmic vinegar
- 1 tbsp white wine vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1/2 cup extra-virgin olive oil
- ALSO some chile powder or fresh chiles to make spicy to taste
- 1 tsp Maldon Salt
- 1/8 tsp fresh ground pepper
Directions
- blend all except parsley until smooth
- add parsley, and pulse to mix
Notes
- caution: roasted peppers will often be pickled and a bit sour – not those, but if that’s all you have, then that’s fine. or fire roast your own peppers
- 175g peppers is correct. sometimes jar is 500g with lots more. stick to 175
- this recipe makes more than enough. maybe better to half?
