Ingredients
- 3 Plum Tomatoes
- 1 Romano Pepper (long red, sweet)
- 1 Guajillo chile
- 1/3 medium/large white onion (skin on)
- 2 garlic cloves (skin on)
- 2 Jalapenos
- 1/4 lime
- 3/4 tsp maldon salt
Directions
- heat large cast-iron skillet
- toast all until nice and have nice charred burnt stuff
- remove seeds, stem, and placenta from guajillo* and red pepper
- remove stems from chiles
- remove skin from onion and garlic
- remove tomato top
- blend all but line and salt
- add salt and lime to taste
Notes
- *some seeds from guajillo fell in last time, so keep to add heat
- tomatoes need to be charred, but don’t let them get soft and turn into pasta sauce
