Roasted Red Salsa

Ingredients

  • 3 Plum Tomatoes
  • 1 Romano Pepper (long red, sweet)
  • 1 Guajillo chile
  • 1/3 medium/large white onion (skin on)
  • 2 garlic cloves (skin on)
  • 2 Jalapenos
  • 1/4 lime
  • 3/4 tsp maldon salt

Directions

  1. heat large cast-iron skillet
  2. toast all until nice and have nice charred burnt stuff
  3. remove seeds, stem, and placenta from guajillo* and red pepper
  4. remove stems from chiles
  5. remove skin from onion and garlic
  6. remove tomato top
  7. blend all but line and salt
  8. add salt and lime to taste

Notes

  • *some seeds from guajillo fell in last time, so keep to add heat
  • tomatoes need to be charred, but don’t let them get soft and turn into pasta sauce
