Satay Sauce

Chicken Satay is awesome

makes 4 servings+ (1/2 is probably enough)

ingredients

  • 1/2 cup cashews, toasted. grind to almost powder, but don’t turn to paste (little chnks is OK)
  • 300ml coconut milk
  • 2 tbsp red curry paste
  • 2 tbsp pommegranate syrup
  • 2 tbsp palm sugar

instructions

  1. in a small non-stick pot add 1/3 cup c milk, boil
  2. add paste, cook until thickens
  3. add rest of milk, nuts, tamarind, sugar
  4. let thicken ( 5 min-ish)
  5. add fish sauce for flavour (1-2 tbsp)
