Soy substitutes A

can’t recall what happened here

  • quite a bit of coconut amino (measure that little ceramic dish with leaf bottom - 1cm -ish depth)
  • 2-3-4 not more dashes of fish sauce
  • 1 dash vinegar from bottle. too much came out, but it was the right amount
  • large (4-finger) pinch of maldon salt. no more.

Soy substitutes B

this said v2, so guess it came after the above

Into 1/4 cup, add:

  • 1 tsp balsamic
  • 1 tsp fish sauce
  • Remaining 1/4 cup filled with coconut aminos
  • 1/16tsp marmite

Soy substitutes C

thhink this was the latest, tried all these, i think the last one was right, maybe even all three mixed

  1. 1 tbsp brown sugar + 1 tbsp white vinegar
  2. 1 tbsp brown sugar + 1 tbsp cider vinegar
  3. 1 tbsp brown sugar + 1 tbsp balsamic vinegar + pomegranate

internet recipe

(can’t remember if i tried this)

  • 1 cup homemade or low sodium or no-salt-added store-bought beef stock
  • 2 Tbsp balsamic vinegar
  • 2 tsp cider vinegar
  • 1 Tbsp plus 1 tsp cooking molasses
  • pinches white pepper, garlic powder and ground ginger
  • salt to taste (optional)
  1. Place all ingredients, except salt, in a small pot.
  2. Bring mixture to a gentle simmer, reduce to about 2/3 cup
  3. season with salt
