Makes 2 burgers
Ingredients (burger)
- 200g pork shop (with fat)
- 125g yield chicken thigh (boneless, with skin)
- 4 bacon strips
- Chipotle chiles in sauce ( youâll only use 2 tsp-worth)
- Gunidilla (spanish yellow) peppers
- 2 pieces of bacon
- tetilla cheese, sliced
- cilantro
- pickled red onion
- buns (not sure what kind)
Ingredients (burger)
- mayo,
- lime
- ginger paste
Directions
*** prep ***
- add (?amt) ginger past and lime to mayo, set aside in fridge
- remove skin from thighs and set aside
- ground meats in food processor, don’t turn into mush
- add 1.5 tsp chopped chipotle and suace to meand and make patties
- make patties, salt & pepper outside, set aside
- turn on oven if you’re going to toast in oven
*** cook bacon & chicken skin ***
- make bacon and skin crispy
- salt/pepper skin and set aside
- set fat aside
*** cook burgers ***
- fry in pan in a bit of leftover fat, turn over after about 5 minutes
- put a nice slice of cheese on after you flip it.
- cook to 71c/160f
- toast buns during this time
- take off heat, let sit for 3 minutes
*** assemble burgers *** 0. lots of mayo on the toasty bread
- meat, then 1 slice of bacon
- cilantro
- picklec onions
- 1 pepper
- sprinkle chicken scratching on.
