Spinach soup
Spinach soup are awesome
Ingredients
- olive oil
- 1 bunch if spring onions
- 1 leek
- 2 small celery sticks
- 1 small potato
- 1/2 tsp ground pepper
- 1 l stock (vegetable or chicken)
- 400-500 g spinach
- creme fraiche
Directions
- Add olive oil, onion, leek, celery and potato in sauce pan, stir and put on lid to let it sweat for 10 min.
- Add stock and cook for 10-15min (until potato is soft).
- add spinach and cook for a few more minutes. Use hand blender to blitz to a smooth soup.
- Serve with creme fraiche.
