Sumac Chicken

Simple roasted sumac chicken that works well with salads and slaws

Ingredients

  • 4 chicken thigh fillets or 2 large chicken breasts
  • 2 tsp sumac
  • 2 cloves garlic, crushed
  • 1 tbsp olive oil
  • juice of 1/2 lemon
  • salt
  • pepper

Directions

  1. Mix the sumac, garlic, olive oil, lemon juice, salt and pepper together.
  2. Coat the chicken well and leave for 20-30 minutes if you have time.
  3. Preheat the oven to 180 degrees Celsius fan, 200 degrees Celsius conventional.
  4. Place the chicken on a baking tray and cook for 25-30 minutes, depending on thickness.
  5. Let the chicken rest for a few minutes before serving.

Notes

  • chicken breast will be leaner, but thigh fillets will be juicier
  • good with cabbage slaw, cucumber salad or a small amount of couscous
  • finish with extra lemon if you want it sharper
