Sumac Chicken
Simple roasted sumac chicken that works well with salads and slaws

Serve with cabbage-cucumber-slaw
Ingredients
- 4 chicken thigh fillets or 2 large chicken breasts
- 2 tsp sumac
- 2 cloves garlic, crushed
- 1 tbsp olive oil
- juice of 1/2 lemon
- salt
- pepper
Directions
- Mix the sumac, garlic, olive oil, lemon juice, salt and pepper together.
- Coat the chicken well and leave for 20-30 minutes if you have time.
- Preheat the oven to 180 degrees Celsius fan, 200 degrees Celsius conventional.
- Place the chicken on a baking tray and cook for 25-30 minutes, depending on thickness.
- Let the chicken rest for a few minutes before serving.
Notes
- chicken breast will be leaner, but thigh fillets will be juicier
- good with cabbage slaw, cucumber salad or a small amount of couscous
- finish with extra lemon if you want it sharper
