Ingredients

Cake

  • 2 Large Egg
  • 6 Tbsp Milk
  • 6 Tbsp Grapeseed or Canola oil
  • 1/4 tsp salt
  • 6 Tbsp cocoa powder
  • 8 tbsp flour
  • 8 Tbsp Sugar
  • 2 tsp baking powder

Filling

  • Dulce de leche (1 can sweetened condensed milk, boiled for 2.5 hrs)
  • Cashews

Ganache

  • 400g chocolate (70% Lindt)
  • 200ml whipping cream

Directions

Dulce de leche

  1. Fill large pot with water, 1 inch minimum above top of can
  2. boil for 1 hr
  3. turn over, boil for 1.5 hrs
  4. Remove from heat, set aside

Filling

  1. 1/2 Cup Sugar
  2. Salt
  3. Little water
  4. Boil
  5. add nuts
  6. Stir constantly. First crystalyzes, then browns
  7. set aside on baking sheet

Cake_

  1. Mix dry ingredients (flour, cocoa, baking powder, salt)
  2. Whisk milk & egg, add oil
  3. Add dry to wet & mix
  4. Butter pan
  5. Dust with flour
  6. 35 minutes @175C(350F)
  7. Remove, let cool on rack
  8. cover in saran wrap if you’re not going to make cake right away

Ganache

  1. Warm milk to simmer/just before boil. DO NOT LOOK AWAY
  2. Pour into glass bowl
  3. add chocolate
  4. whisk
  5. whisk some more, until you get good consistency
  6. Let cool a few minutes until it gets the right pouring consistency
